Coeur a la Creme

A delicate and airy, a cheese dessert served with Hedges RMF Raspberry Sauce.

Ingredients- Coeur a la Creme

· 12 oz . cream cheese, room temperature

· 1 1/4 cup powdered sugar, sifted

· 2 1/4 cups heavy whipping cream

· 1/2 tsp fresh vanilla bean, split and scraped

· 1/8 tsp kosher salt

· 1/8 tsp almond extract, optional

Hedges RMF Raspberry sauce

· 1 C fresh raspberries

· 1/4 cup Hedges RMF wine

· 2 tbsp granulated sugar

· 2 tbsp water

· pinch of kosher salt

· 5 whole peppercorns

· 1 small bay leaf

· 1/2 tsp lemon zest

To create the Coeur a la creme

  • Beat (with the paddle attachment) the cream cheese and powdered sugar on high speed until whipped and smooth. Use a rubber spatula to scrape the sides and cream the mixture until smooth.
