Red Mountain Recipe Series - Oven Roasted Pork Chop with Savory Bread Pudding and Romesco Sauce and Chocolate Ganache Cake (Vegan)

March Finished Pork Chop

RECIPES: Oven Roasted Pork Chop: Season w/ extra virgin olive oil, chile flake, granulated garlic, smoked paprika, chopped parsley, kosher salt and cracked pepper. Rub seasonings into meat, grill or sear in pan on both sides, bake in oven at 425 degrees, to desired done-ness.



Savory Bread Pudding (serves 4-6)

2/3 gallon of bread cubes 32 oz. whipping cream 7 eggs 1 cup sugar

3 TBSP + 1 tsp salt 1/4 tsp nutmeg 4 cups of sliced mushroom of choice (we’re using locally grown pink pearl oysters from Columbia Basin Shroomery) 4 TBSP chopped chives or scallions 4 TBSP chopped parsley 40 turns of black pepper 1 tsp fresh thyme leaves

Whisk together cream, sugar and salt. Add eggs and remaining ingredients, fold in bread cubes & mushrooms. Add to suitable baking dish (this recipe makes a 9”x11” half hotel pan). Bake at 375 for 45-55 minutes. Finish with broiler if more color is desired.

Romesco Sauce

3 TBSP grated parmesan 1/2 cup Marcona almonds (substitute other nut if preferred) 1 cups roasted red peppers 1/4 cup extra virgin olive oil 2-tsp Sherry vinegar 2 large cloves of garlic 2 tsp smoked paprika 1 tsp salt

Process all in blender till smooth. Adjust seasoning.

March Choc Cake

Chocolate Ganache Cake

1 cup oat milk 1 tsp. apple cider vinegar 3/4 cup granulated sugar 1/3 cup canola oil 1 1/2 tsp pure vanilla extract 1 cup all purpose flour 1/3 cup unsweetened cocoa powder 3/4 tsp baking soda 1/2 tsp baking powder 1/4 tsp salt

Whisk together first 5 ingredients until sugar is somewhat dissolved. Sift together remaining ingredients and combine. Mixing until lumps disappear.

Bake at 350 degrees for 30 minutes. 8 inch springform pan, lightly greased.

Ganache

2/3 cup oat milk 8 oz dark chocolate (chips or chopped) 3 TBSP maple syrup

Heat oat milk. Add maple syrup and chocolate and whisk until smooth.
